You may only operate an egg packing station if it has been approved by the competent authority under market law and has been issued a packing station identification number.
Egg packing centers are businesses that sort, mark, pack and/or repack eggs according to quality and weight classes. Egg packing centers may only be operated if they have been approved by the competent authority upon application and have been assigned a packing center identification number.
Outside of market regulation law is required:
- Approval under hygiene law: Egg packing centers may only place their products on the market if they are approved or registered under hygiene law. Responsibility: Veterinary and food inspection offices.
- Eggs from organic production: In addition to market law and hygiene law, confirmation by an approved organic inspection body is required.
If eggs are sold ex farm (production site), at the door or at a public market directly to the end consumer and not according to quality and weight classes, no approval as a packing station is required.
Direct marketers who market eggs via a trading partner (retailer, baker, kiosk, other direct marketer, etc.) or who wish to offer eggs sorted by size and quality class or who have a sales radius of more than 100 kilometers require approval as a packing station.

- Approval under hygiene law
- Proof of suitable technical facilities
Only companies that have suitable premises and technical facilities for grading eggs according to quality and weight classes may be approved as packing centers.
Packing centers must have the following technical facilities that are necessary for the proper handling of eggs:
- an automatic or permanently manned candling unit / candling lamp that enables the quality inspection of individual eggs,
- device(s) for determining the height of the air chamber,
- a system for sorting the eggs by weight class,
- one or more calibrated scales for weighing the eggs (note: accurate to 1 gram) and
- Device(s) for marking eggs.
The premises of the packing station and the technical equipment must be in good condition, clean and free of foreign odors.
Packing centers that work exclusively for the food and non-food industry are not required to have suitable technical equipment for sorting eggs by weight class.
An application for approval as a packing station must be submitted to the competent body.
The competent body shall examine the application. If the application is approved, a written decision is issued with notification of the identification number.
The authorization can be revoked at any time if the necessary requirements are no longer met.
Eggs must be graded, labeled and, if necessary, packaged within ten days of laying.
Graded and, if necessary, packaged grade A eggs may only be delivered in packaging with a printed producer code.
Packaging must be clean, shockproof, dry and undamaged. The packaging material must protect the eggs from foreign odors and possible quality deterioration.
Once the packing station has been approved, all marketing channels are open. The following lists must be kept daily, broken down by type of farming:
- the quantities of ungraded eggs delivered to them, broken down by producer, stating name, address and producer code and laying date or period,
- after grading of the eggs, the quantities, broken down by quality and weight class,
- the quantities of graded eggs received from other packing centers, including the code of these packing centers and the best-before date (BBD),
- the quantities of ungraded eggs delivered to other packing centers, broken down by producer, including the code of these packing centers and the laying date or period, and
- the number and/or weight of eggs delivered, broken down by quality and weight class, packing date for class B eggs or MHD for class A eggs and by buyer, stating name and address.
The lists must be kept for at least 12 months from the date they are drawn up.
